Making a blanket

Hello. I want to sew a blanket and I know how to knit and crochet at a pretty good level. I've been crocheting for longer, but mostly focused on amigurumi and household items. I don't knit for that long, but I control my tension well and move pretty fast.

I'm not sure which method would make a blanket better. I've never done a project as large as what I'm planning, it's going to be bernat blanket velvet plus, and I'm looking at a lot of balls of yarn, so I want to make sure I'm using the right method. I know that crocheting is faster and thicker, but I also know that crocheting can be softer.

Fellow artisans, should I knit or crochet this blanket?

I would be interested in making a blanket. It doesn't seem easy to me. I remember my grandfather used to go to the lakes, gather reeds there, and bring them home, and we used to take apart the pulp (it was very soft and fluffy, reminded me of wool) and stuff sheets or pillowcases with it. Those were hard times, and such homemade blankets and pillows were substitutes for blankets from stores. Gradually we got out of the money crisis, and I decided to give my grandfather for his birthday a picture blanket with a picture of us holding reeds by the lake and smiling. It was a special time.
