Replacing the handle and latch on the door

I am in the process of dismantling the door - initially I wanted to install a new door because the one we have is a little outdated. However, this is a massive tree, so I was always afraid to get rid of it, because I wanted to preserve the charm of the house in time. So now we're taking it off, but the door comes with an old-style handle - just pull/push to close - closes with a ball/twist.
When the wind blows a little in the house, the door swings open, which is a little annoying - so I wanted to ask if anyone could give advice on how to replace this system with a door handle - can I hire a locksmith, carpenter or someone else? It looks like we'll have to wait a long time for the carpenter's arrival.
What type of person do I need to change this?
Or can I do it myself?

Door locks are complex and require decent tools as well as knowledge.

I was doing renovations in my house last year. My doors are a kind of rarity just like yours. I didn’t replace them and made a restoration. They are about 30” x 80”. I also replaced the wallpaper, baseboards, and windows. There was another problem. My floor noisily creaked for a long time. And I decided to fix it. Right now it is high-quality solid wood parquet. It was varnished and would stay beautiful for a long time. I wanted to make just cosmetic repairs but ended up with a full house removal xD
